1. When was the original mill built?

The original mill was built in the early 17th century.

  1. How do you know the production of olive oil have been important in the area before the mill built?

The production of olive oil was very important in this area before because, during the 17th century, there were at least, 20 others olive mills in the surrounding 15km, compare to only two today.

  1. There were originally 2 mills on the site, what the other mill do?

The other mill is a flower mill.

  1. How are both mills powered?

The two mills uses the same source of water to turn the grindstones, and produce the oil

  1. How long did the olive picking season last?

The olive picking season last from October to February during the harvest season.

  1. Where was the olive oil stalled?

The olive oil was stalled in the two stone tanks.

  1. When was the flower mill demolished?

The flower mill was demolished when the olive mill was rebuilt.

  1. How did the olive presses worked?

Since the presses were manuals, the mill needed to employ as many as 6 people to operate on them.

2.3. Listen to the questions and write your answers

  1. What is the first thing that happens when the olives arrive at the mill?

They are washed because they need to be separated from any impurities for the rest of the process.

  1. Once the olives are clean, what is the next part of the process?

The olives are crushed by grindstones until they make a thick paste.

  1. What happens to the paste?

The paste is filter a first time, and formed into a sort of cake, that the manufacturer called scorten. They stack the cakes on top of one another, into 25 to 30 levels.

  1. After being stack, what happened to the scortens?

They are pressed mechanically to obtain a liquid, this part is the most important step of the process and determined the quality of the olive oil.
