Recipe of thieboudien

Ingrédients

Fresh fish

125 g of pore

125 g of concentrated tomato

400g of peanut oil

1 green chilli pepper

3 red chillis

1.250kg of rice (of preference royal umbrella)

250g of carrots

1 small cabbage

300g of sweet potatoes

300g of eggplant

200g of Swede, parsley

3 onions with others vegetables if you want.

Recipe

Mince together one onion, the parsley and a few red chilli, salt. Do a small hole in every cut of the fish and fill it with the mixture.

In a boiler heat the oil and cook inside the cuts of fish.

Take out and substitute by the rest of minced onion, the concentrated tomato (padded in the water).Carry to simmer

Lower the fire and cook 5 minutes.

Add the eggplants, the Swedes, the sweet potatoes, the carrots and the cutted cabbage, the chillis cutted into small cuts, the cutted pore into chunk.

Cover to water. Salt, pepper. Carry to simmer, lower the fire and cook for 30 minutes. Add the cuts of fish.

Cook again for 30 minutes.

Take out the cuts of fish and the vegetables with a little sauce for the presentation.

Let the rest of the sauce on the fire, add it the rice, and cook for 20 minutes. Serve the cooked rice in a plate; decorate with the fish, the vegetables and the sauce.

Enjoy your meal (after that you can drink tea or eat fruit)
