1. Yo! Sushi gives the customer a speed advantage by serving food on a conveyer belt the customer can serve themselves which minimize the time of ordering and bring the food, and take-home option for whom cannot sit and take time at restaurant. They provide quick service eatery that customer could take only 20 minute for their meal. They are not locating themselves as a destination restaurant but are the place for rush customers. They choose the location that fit their style of dining. However, they are ready to serve for diners with a lot of time as well. According to their operation of putting the food on belt, customer can choose to eat directly without ordering but if they want to order food that is not on the belt they also can order as normal. The restaurant could be easily assessed with adequate infrastructure. They manage by centralizing ordering which can reduce the cost and make their price more competitive. The food that cooked and stays for long time has lower quality. To maintain the quality, they has a policy of taking the food out if they stay for too long, 2 hours maximum for the food on belt. Thus, they serve customer with high quality fresh, healthy and safe food. Chefs also have to wash their hand every two hours. The restaurants have to be cleaned correctly in order to make customer satisfy. They could maintain the quality of food and stable the process such as do not let the belt empty. Notice that each season has different number of customer that comes to the restaurant, Yo! Sushi provide seasonal menus and special dishes. And also meal promotion during the time that customers are less than normal. In order to maintain or keep their customer, they try to be flexible of the product and service as much as they could to respond to the dynamic environment.
